I found a version of this dish in Carol Tennant’s seafood cookbook (published in 1999), and it’s an absolute gem! On first glance, it looks quite involved (at least it looked that way to me 😃), but it's actually really easy to prepare so go for it, you won't be disappointed.
And those Italian flavours really do pop out of this dish! It’s a hearty, comforting meal that’s bursting with flavour from combining tomatoes, capers, olives, basil, and mozzarella with the fish 🇮🇹. Perfect for hobby cooks — letting good ingredients shine without overcomplicating things! 😃.
I used cod, but any white fish should work depending on what you can lay your hands on.
And for side dishes? I went with sautéed potatoes, cooked with shallots, and garlic, plus a simple green salad.
If you love Mediterranean flavours without too much fuss, this dish is a big Win-Win! It has all the elegance and flair of a sophisticated dinner, but it's easy to prepare, so could be a 'mid-weeker', too

Ingredients

Olive Oil - 2 tablespoons

1 Onion - finely chopped

3 Garlic Cloves - finely chopped

Fresh Chopped Thyme - 2 teaspoons (dried is fine, too)

Red Wine - approx 175ml

Chopped Tomatoes - 2 x 400g cans

Sugar - 2 teaspoons

Pitted Black Olives, roughly chopped - 50g
-
Pitted Green Olives, roughly chopped - 50g

Capers, drained, rinsed and roughly chopped - 2 tablespoons

Fresh Chopped Basil - 2 tablespoons

1 Lime

4 Cod Steaks - approx 175g each (other white fish would be fine, too)

Mozzarella Ball, drained and sliced. 150g

Salt and Pepper
Directions
Heat the olive oil in a large saucepan. Add the onions and sauté gently for 5 minutes until they soften, without browning. Stir in the garlic and thyme, and cook for an additional minute.
Raise the heat and pour in the red wine. Let it simmer until it reduces and becomes syrupy. Add the tomatoes and sugar, then briefly bring the mixture to a boil. Cover the saucepan and let it simmer for 20 minutes.
Stir in the olives, capers and the zest of the lime (finely chopped or grated), then simmer uncovered for 20 minutes until the sauce thickens. Stir in the basil.
Place the cod steaks in a shallow, ovenproof dish (e.g a lasagne dish) and spoon the tomato sauce over them. Bake in a preheated oven at 180°C / 350°F / Gas Mark 5 for 20-25 minutes, until the fish is just tender.
Slice the mozzarella ball. Take the dish out of the oven and arrange the mozzarella slices on top of the fish.
Return the dish back in the oven for an additional 5 to 10 minutes, until the cheese has melted.
Serve with another squeeze of lime.
