Here's what I made this week!
This Mango & Avocado Salsa brings a real burst of taste to the table - perfect for BBQs ☀️
Peeling and chopping the mango was the only leap into the unknown for me - if it is your first time facing a mango on the chopping board, maybe 'google' it first! The Mango 'Hedgehog' method is the best way I found. 😃
After that.. it's a breeze... just mixing the ingredients in one bowl (leave the avocado till last - see instructions), and then you'll have yourself a juicy mango, creamy avocado, sweet tomato & zesty lime salsa - a complete fiesta of summer flavours! 🍋🟩🍅🥑⛱️
Delicious as a BBQ side dish (particularly good with marinated pork, I think).
Mango and avocado aren't something I would normally grab in the shop but I'm so pleased I did - the flavours are fabulous! And I've made it a couple of times now and it's already a firm favourite with Mrs Treacle!

Ingredients

1 ripe Mango

1 ripe Avocado (still firm enough to hold its shape when diced up)

16 Cherry Tomatoes - halved.

1 Red Onion

‘Lazy’ chopped Red Chilli - 1 teaspoon (or more, to suit your taste)

Fresh Coriander - large handful. Chopped.

1 Lime - for zest (finely chopped) and 1 to 2 tablespoons of juice.

Salt - 1 teaspoon

Pepper to taste (optional)
Directions
Peel and roughly chop the mango - see description at the top if, like me, it is your first time with a mango! 🥭
In a medium bowl, combine all the prepared ingredients, except for the avocado….so the mango, cherry tomatoes, red onion, the chilli, the coriander, the lime zest and juice, and the salt.
Leave for 30 mins in the fridge - it will maximise those delicious flavours - before gently stirring in the avocado, allowing the avocado pieces to keep their form (not too ‘smashed’)
